Over the past few years, Costco has solidified itself as a dessert destination — particularly for its ever-changing layered bar cakes. Yes, the bulk warehouse is known (and beloved) for its gigantic and delicious pies, but its bar cakes are also serious business. So when I caught wind on social media that Costco launched a new Chocolate Chip Cookie Bar Cake, I called my local warehouse every single day for an entire week until I could confirm that it had arrived on shelves.
You can probably guess what happened next. I immediately ordered one of the cakes to sample for myself. (Spoiler alert: It’s the best cookie cake I’ve ever tried).

Costco’s latest bar cake is a visual feat. It’s a cookie cake in the most abstract and exhilarating sense — it’s built with layers of vanilla and chocolate cake, mousse studded with cookie dough pieces and mini chocolate chips, and a chocolate frosting.
The cake is located in the refrigerated section of the bakery and retails for $18.99 in stores. It weighs more than 2.5 pounds and serves up to 20 slices per cake. It’s unclear exactly how long it’ll be around, but given trends with previous bar cakes, you can expect to find it in stores for the next month or two.
My Honest Review of the Kirkland Signature Chocolate Chip Cookie Bar Cake
I spent a week anticipating this cake, so as soon as I got my hands on it I nearly went straight in for a slice. First, though, it was worth admiring: Each layer is visually distinct, from the chocolate cake base to the creamy white mousse center speckled with bits of cookie dough, followed by vanilla cake and another layer of chocolate.
More importantly, it tasted spectacular (just like a chocolate chip cookie!). All of the layers are distinct, yet go together. Nothing is too sweet, which I’m a major fan of when it comes to baked goods.
The contrast between the moist cake and the creamy mousse with hearty pieces of dough is just divine. The cookie dough on its own is sweet, buttery, and soft, and a fun addition to the standard layers of the cake. I’m starting to plan my Super Bowl menu, and you can bet that this cake will absolutely be on it.
